Find the problem
The bars measure radio signal to the nearest tower. They say nothing about what is behind the tower - and the "5G" icon itself hides two different networks. Two rows in Radien and one ping tell you which situation you are in.
Open Radien's status card on cellular, then Network Details. The Radio row says what the status bar rounds away:
Open Ping and probe 8.8.8.8 over cellular. Full bars with high or wobbling latency at busy hours is the signature of a congested cell: the radio is fine, the tower is crowded. Clean latency means the connection itself is healthy - and a slow app is then that app's problem, not 5G's.
If Network Details shows a NAT64 row, your carrier translates between address families inside its network. That is normal engineering, not a fault - but it explains why some old-fashioned tools behave oddly on cellular.
What you now know
Which 5G you actually have, whether the cell is congested, and whether the slowness even belongs to the network. Full bars were never a lie - they just answer a smaller question than the one you were asking.
